I’m new to Elderberry Syrup.  I’ve heard a lot about it in the last few years, and this year I finally tried it. It’s pretty expensive to buy already made, so I decided to make my own.  It was super easy in my Instant Pot, and it makes a LOT, enough for everyone in my house for probably 6 weeks.

A bit about Elderberry Syrup

Elderberries are higher in antioxidants than blueberries, cranberries, blackberries, AND goji berries. This big boost of antioxidants helps your cells fight against both internal and external damage. You can buy them dried in bulk from Amazon, that’s the cheapest place I found them.

They have also been shown to reduce the intensity and duration of the cold virus when taken within 48 hours. Anthocyanidins stimulate the immune system and boost your body’s fighting power. In 1995, Panama had a massive influenza outbreak and the government of Panama distributed the syrup and extract to help its citizens fight the virus.

Elderberry syrup can also help lower blood sugar.  In recent laboratory studies, it was shown to increase glucose transport and oxidation from the bloodstream.  More studies need to happen, but these preliminary results are fantastic!

All-in-all, Elderberry syrup is an awesome health boost. It has very few downsides.  If you have an autoimmune disease (lupus, IBD, fibromyalgia etc) talk to your dr before taking Elderberries, as it does stimulate your immune system.  Don’t eat them raw, and as always, if you’re unsure, talk to your medical professionals. I got almost all of the ingredients on Amazon, they have the best prices! These silicone molds worked perfectly, and they come with droppers to make getting the syrup in the moulds way easier.

Elderberry Syrup & Gummies

This syrup can be made into gummies, poured over pancakes, or just drunk straight. 

Ingredients

  • 1 cup dried elderberries
  • 4 cups water
  • 1/2 cup orange juice
  • 1 cinnamon stick
  • 1/2 cup honey

For gummies

  • 1/4 cup elderberry syrup
  • 1/3 cup powdered gelatin (grab an organic, naturally sourced brand from grass-fed or free-range animals. You can also get marine gelatin and make these vegan!)
  • 1/2 cup hot water

Instructions

  1. Add berries, water, orange juice and cinnamon stick to Instant Pot

  2. Cover, seal the lid, and set for 20 minutes

  3. Allow pressure to release naturally (about 10 minutes) and remove the lid. 

  4. Using a fine-mesh strainer strain the syrup into a big bowl to let it cool for about 15 minutes

  5. Once the syrup has cooled add the honey. If you add the honey to the syrup straight out of the pot it will kill all the helpful enzymes in the honey. 

  6. Pour into a fridge-safe container (mason jars are good) and you're set! Adults should drink 1-2 tbsp 2-3x per day. Kids over 1 can have 1-2 tsp 2-3x per day. Or, turn it into gummies!

Elderberry gummies

  1. Get your silicone trays ready beforehand - things move fast after you add the gelatin to the syrup.  I find putting them on a cookie tray contains any mess and keeps them sturdy. 

  2. Add the elderberry syrup to a measuring cup that holds 3-4 cups

  3. Stir in the gelatin

  4. Add the hot water slowly and stir until the gelatin is dissolved.

  5. Immediately start filling your moulds.  Either use a dropper to fill small moulds, or pour the mixture into larger ones.  If the mix starts getting solid you can put it in the microwave for 10 seconds, or keep the whole measuring cup in a larger bowl of hot water. 

  6. Let the gummies get solid in the fridge for at least 1 hour, and then pop them out of the moulds. Store in the fridge.  Start with eating 1-2 per day, and you can work up to 5 or 6. I'll warn you though - start small.  Gelatin can do interesting things to your digestive system if you're not used to eating it every day.
